Storing and reheating leftovers

Use small containers, refrigerate promptly and reheat leftovers thoroughly.

Get leftovers chilled promptly

Refrigerate perishable leftovers within 2 hours, or within 1 hour when the surrounding temperature is above 90°F / 32°C. Divide a large quantity into small, shallow containers so it cools more quickly.

Label the container

Mark the date so you know how long the food has been stored. Keep the refrigerator at 40°F / 4°C or below. Use most refrigerated leftovers within 3–4 days or freeze them sooner.

Reheat thoroughly

Reheat leftovers to 165°F / 74°C, checking with a food thermometer. Stir microwave-heated food and check several places because heating can be uneven. Discard food that has been held outside safe time and temperature limits.
